So as I mentioned in a previous post, Moonrouge was away on an overseas business trip last week. To welcome him home from the frozen North, I made a true Southern meal: Southern style (oven) fried chicken.
I love fried chicken, but the calories, the grease and the mess of frying chicken is a little off-putting. My other problem is that I can never fry chicken so that it’s cooked all the way through without burning the outer skin/flesh. So the perfect solution to that is to make oven fried chicken.
The results are tender, juicy, flavorful chicken that was perfectly cooked all the way through. I would have liked if the skin/coating had turned out to be crispier but Moonrouge said he actually preferred it the way it was coz it had the texture of KFC. Well, that worked out great, then
I also made some sides to go with the chicken. I took a lot of shortcut with them coz I used canned green beans and instant potatoes (I don’t usually use instant potatoes but Moonrouge has a few of them in the pantry from before I moved in so I need to start using them), but I dressed them up with green onions, regular onions and chopped bacon.
